Hold the Mayo - Let's Cook!

We decided we needed to make best of the last night we had at home sans child. KP and I dug out out the old trusty cookbook we love for Ethan and went to the grocery store when he got off work at 8am.

As he slept, I cleaned the house, did laundry, dishes, mopped, and prepped for cooking. I tried to leave the house for a little bit so I didn't wake him - but really, I could only stay away for so long. I felt bad waking him at 4:30 but we had big plans.

First stop - beer shop. Not going to lie. I needed a drink to get prepared for today. Have you tried this?

Stress-be-gone.
 You should.

Then we got down to business. Two amazing dishes - one hour. Now we have 10 meals to pull when we need them the most!

One Pan Lasagna
Tyler (yah, we're on a first name basis now) wrote in his book "...it doesn't matter what it looks like as long as it tastes good." It's paraphrased but all the same. From the spinach to the motz, everything is fresh. I should note; although this is not a low sodium dish, I didn't add any salt to the already salty-saltiness.

And it tasted ah-mazing!
Turkey Stroganoff 

My pictures don't do this dish justice. Homemade turkey meat balls, fresh Amish egg noodles and a lovely, from-scratch stroganoff sauce fit for a king - or at least a two-year-old and two thirty-somethings. Voila! Two more meals in the freezer section of cafe de Podfam. Note: Again, not low sodium but no extra salt from this girl!

When it was all said and done, I felt accomplished. Proud I had not wasted my day but, uh oh, I hadn't packed yet. Minor detail. Silver Linings Playbook (4 stars) and Magic Mike (2 stars) entertained me until I hit the sheets in time for KP to head to work. Luckily, I got some great sleep to prep me for the drive to Rochester.
