Getting Served

...dinner post E-day that is.

As I mentioned a couple posts ago, we purchased a large stand up chest freezer – which KP proudly showcases in our tiny garage and are now ready to start cooking to fill it with some easy-to-heat meals for when we get home from the hospital. Our to-do list includes heading to our local Italian grocers to pick up some ready made frozen pizza crusts, raviolis and cheeses and then traveling to Costco to get the makings for the amazing culinary dishes you recommend below. (Hint Hint – please help us by contributing your favorite recipes in the comments section below.)

I know for a fact, I have several friends that are wonderful cooks, even one that makes his living as a chef (Gant this one is for you buddy). All recipes are welcome. Casseroles, or hot dishes as my northern friends would say, soups, and single serving stuff like BBQ beef for sammiches would be great. It is hard for me to get creative at this point in my pregnancy and would love some ideas on easy dinners that do not always involve starting the oven, considering it will be summa-time.

  1. one of my all time faves is pulled bbq chicken sandwiches...Throw a few chicken breast in the crock pot...dump some bbq and a littl bit of garlic powder.
    Cook on high for 6 hours.
    Shred with fork
    Put on bun and enjoy!
    Freezes well too :)

  2. I make these great chicken & noodles. They freeze great too.
    1 whole chicken
    1 pkg. Reames egg noodles (freezer section)
    chicken bullion
    carrots, celery, onion & garlic
    half & half

    First boil the chicken in large pot for about 2 hours. I boil in water with chicken bullion & spices.(bay leaf, thyme, celery seed, salt & pepper, etc) Once cooked take out & pull all meat off the bone. Chop up meat. Now add your carrots, celery, onion, garlic & egg noodles to the chicken stock. Cook till noodles & veggies are tender. Add the chicken. I pour most of the stock out till about 1/3 left & then add half & half until desired amount of liquid. Sometimes I like them runny & sometimes with not very much liquid, more thick.

    The thing that makes this different than other chicken & noodle recipes is the egg noodles. They are a dough noodle & they are delicious!! I hope you enjoy!
